So whats the best way to measure what shock lenght I will need for my back shock? Take off the current ones and do a compression and droop test? Eyelet to eyelet? any ideas...

Just need the back ones... I only have about 2-2.5 inches of travel into my shock body and its not enough for full compression

Correct in your assumptions. You'll also need to measure static height as well. This can be a limiting factor in shock decisions, too.
Since you're a leaf-sprung vehicle, it's going to be hard to get the suspension to full compression and droop. Often times you need to remove leaves from the pack to get it to move to complete extremes.
You've got a total of 4.75" of lift over stock (in the suspension), you can use that as a baseline for calculations.
