View Full Version : Rant: When did 'Medium' become the new 'Rare'?

Frankly, I'm getting sick of playing the guessing game when I go out to dinner. Medium has become the new rare, like black is the new pink. I encountered this countless time across various resturaunts over the last 6 months. What gives? Personally, I like my steak medium rare, but I don't want it crawling off the plate. Last night it was at the Outback on Mayo Blvd.
Anyone ever eat at Deluxe Burger? I don't like rare ground beef, as if I had a choice...

Pink is for...well it's not for meat. Nothing worse than a half cooked steak or burger.

I would not send it back:( ever see the movie waiters well that crap happens I have never worked outside of resturaunts and have seen a lot of sick sh!t:D:D

I used to like it crawling off my plate, but not anymore, with all the crap that's going around these days... Next thing you know, beef will be causing a new strain of Gonoherpisyphilaids...:D

This was last Saturday night at my house.:) $80 in steaks from Midwestern Meats and Main and Greenfield in Mesa. That filet in the back middle is 2" thick. That will make your colon wince.:)

We just returned from Michigan, while there at one resturant I ordered my steak Med/rare they would not do less than med/well:mad: :mad: Its my gut and I ll put what I want in it!!!

You invite me next time and just let me worry about my own colon:D If they kill the cow in the summer time I consider the meat cooked.
Kidding aside, I like a steak cooked "Pittsburgh". They use a high heat and sear the outside to the point of almost blackened and the inside is near raw, now that is eating:D

Delux is probably the best burger I have ever had. I love that place and that fact that they have 40 quality beers (i.e., no coors, bud, etc...) on tap doesn't hurt either.
I'll take my ribeye seared rare please.

I've noticed that even going to the same resturant, when I order a medium rare, I can get anything from rare to medium well. That tells me either the cook is just guessing or each cook as his own opinion on how the meat is supposed to be. I'll have anything over a medium rare sent back. Just too tough and flavorless in my opinion.

I ask what their scale is, and then specifiy what I want mine to be. If it comes differently, then i send it back.
I'd rather it be a little underdone than overdone... food poisoning be damned!

you order Ribeyes and such, they bring out the whole slab and ask "how think"
Those are ABSOLUTELY the BEST steaks I can find, even against Midwestern. I'm talking so fresh and tender that you can put your finger through the meat with very little effort when raw. Cooking Fillets from them is actually difficult... the meat tries to fall apart it's so tender!
I'm freakin hungry now.

Yeah that place is really good. I still ate my burger and really enjoyed it, but it was really raw for ground beef, especially when cooked 'medium'. Their sweet potato fries are great also.
I'd prefer an undercooked steak over an overcooked one any day. One of our steaks went back to the kitchen. I dont' think that the outback waiter spit in it. I worked at a private hole 'n the wall for 6 years, and never saw anyone intentionally messing with a customers order. My wife worked in all kinds of resturaunts for 10 years and she feels comfortable returning a steak, which she did...

Delux... meh. I didn't care for it. Too artsy fartsy, fancy schmancy for a burger joint. Wife and I went a little while back. Burger, I'd call it decent. Sweet potato fries... meh-minus.
I need a burger joint to be a burger joint, kinda like an Alton Brown Road Food Joint.
I prefer Chuckbox in Tempe over any other burger joint I've been to... ever. There may be better, but I've not been there.
But that's my opinion.

Best burger place I've ever been in was when I was going to college in Las Cruces NM. Little greasy spoon called Dicks Diner (or as we affectionately referred to it, 'Greasy Dicks' :p ) Burgers were hand pressed, fries were fresh-cut from huge potatoes, and the service was great! Makes me feel like a road trip is due...
And as far as I'm concerend, anything over medium rare is a waste of good meat and aging:mad:

I get whole tenderloins and Ribyes from COSTCO the cut them myself. You can't beat their meat:D and the prices are right when you buy the whole section.

My wife and I were out in the Buffalo N.Y. area a couple of years ago to visit her mother.
Went to the local steak joint and my wife ordered her steak rare.:rolleyes:
She had to sign a release for them to cook it that way but she got her rare steak.
Medium rare is fine with me!:D

shoot it skin it drag it in here n Ill eat it but hamburger not cooked all the way through not a chance.if want really tender steaks throwem on the counter and let em come to room temp.b4 you cookem just my way a cookin melt in ur mouth steaks

Only way I'll do a medium or med. rare burger is if I grind the meat myself, which is why I went out and got the food grinder attachment for my Kitchenaid stand mixer :D Nothin' better than grinding up a nice chuck roast and making burgers on the grille ;)

ive found it to the the other way around the last few times I've went to Black Angus or Outback if you order anything less than medium rare its way past well ...... I like mine mainly pink with just some if not any red. I dunno what to call that these days either :(

I like my steak bleeding and writhing on the plate.
While in college I was a cook at a steakhouse in Oklahoma and folks would call to see if I was working because I was the only one who could cook a rare steak - I once received $100 tip (which was alot of $$'s in rural Oklahome in the early 80's!).
On the other hand, I also received $100 tip for grilling a steak that ended up being the size, shape, color, texture and smell of a hockey puck - guy just off a oil rig was happy as can be with that steak. Go figure, I guess it takes all types.

I only eat burned steaks. My father would not let me eat my steaks with the family becuase it took too long to cook. I was always the last to sit down. He used to hate it. Now when he comes over guess how his steaks look!!

Medium rare should be red in the center and pink through the rest. Warm to the touch in the center.

Like my grand daddy used to say "Just kill it and bring it out...hell, I'll even kill it..just bring it out!". Or occasionally "I want it rare, you know, so a skilled vetenarian could bring it back to life if he so chose" :D
As for rare becoming something else - thank the liberals who encourage not taking responsibility for your own actions, and feel that everyone else should be looking out for our well being. Restaurants are too afraid of being sued because the fear mongerers have successfully convinced everyone that Salmonella and E coli is in every piece of meat you touch these days.
(I prefer rare meats myself..I've even been known to eat meat raw because I was too lazy to cook it, lol)

I like more raw (or almost raw) meats only if they are prepared properly - usually a good cut of meat, thinly sliced on a bias. Large hunks of raw meat are just too hard to chew.

If you are ordering steaks med well or well done you are destroying the meat. The cook knows you really don't like meat so they save the less desirable cuts for you :D
There really is no danger in eating raw meat. The trouble comes from butchering. If the meat becomes contaminated from spilled gut, then e coli or other issues can be present.
For steaks only the outside needs to be cooked to kill bacteria. for ground beef, the entire burger needs to be cooked to kill everything.
E coli is not the norm but rather the exception to the rule but play it safe :)
When we were younger we ate "Tiger meat" which was raw hamburger spiced with pepper, onions and other spices. Since we butchered the meat we knew it was safe. Great on crackers and a few beers :)

Nothing beats a rare steak smoked with hickory...Right off the grill I want it bleeding when I cut into it.
I have all but stopped ordering steaks when we go out I like mine so much better. And it's alot cheaper too!
